Role Overview

Viking is seeking an experienced Executive Chef to join our Galley team on our Ocean vessels. As a key member of our culinary team, you will be responsible for ensuring the efficient operations of all food production areas, consistently analyzing food production quality and cost, and maintaining a high level of customer satisfaction.

Your Responsibilities
  • Work within set food-cost budgets and follow portion control charts to ensure efficient food production.
  • Share responsibility for food orders and consumption with the Inventory Manager, ensuring accurate forecasting and inventory management.
  • Develop and implement strategies to upgrade food quality and presentation, including hosting Kitchen Table events and cooking demonstrations.
  • Maintain direct communication with the Inventory Manager on provision-related matters, including slow and non-moving item lists, inventory, and standard products.
  • Ensure the maintenance and upkeep of all Galley equipment, including ordering, receiving, and issuing equipment as needed.
  • Ensure that all menus, recipes, methods, and specifications are adhered to, and conduct regular spot-checks to ensure food outlets and displays meet Viking's quality and cleanliness standards.
  • Lead and support a multi-cultural team, maximizing crew satisfaction, productivity, and retention.

Your Profile

To be considered for this role, you must have:

  • Shipboard or premium hospitality experience with at least 2-3 years in the same role
  • Advanced culinary skills and experience in leading multi-cultural teams
  • Excellent English communication skills and the ability to speak additional languages
  • Strong administration skills and proficiency with PC-based databases, spreadsheets, and word processing systems
  • Guest-focused, service-oriented, positive personality, professional appearance, and impeccable hygiene standards
