About the Role

Viking is seeking a highly skilled and experienced Sous Chef to join our culinary team. As a Sous Chef, you will play a key role in ensuring the smooth operation of our galley, providing exceptional food quality and service to our guests.

Key Responsibilities
  • Assist the Executive Chef in overseeing the galley operation, ensuring safe and quality food production.
  • Lead and manage a team of galley staff, providing guidance and support to ensure excellent service and food quality.
  • Develop and implement Standard Operating Procedures (SOPs) to ensure consistency and efficiency in galley operations.
  • Collaborate with the Executive Chef to create menus and recipes that meet the highest standards of quality and presentation.
  • Ensure compliance with all Public Health Policies and Viking's STAR Service Standards.
  • Conduct regular inspections and audits to ensure galley cleanliness and safety standards are met.
  • Develop and implement training programs for galley staff to enhance their skills and knowledge.
  • Assist in the development and implementation of culinary KPIs to drive business growth and profitability.
Requirements
  • Minimum 8 years of culinary experience, including 3 years as a Sous Chef or similar position.
  • Fluent in Japanese and English, with excellent communication and interpersonal skills.
  • Proven leadership and management skills, with experience in leading multi-cultural teams.
  • Strong administrative skills, with proficiency in PC-based databases, spreadsheets, and word processing systems.
  • Excellent knowledge of Public Health Policies and sanitation compliance.
  • Ability to work in a fast-paced environment, with a strong focus on quality and customer satisfaction.
