Job Description
Would you like to do the opening of our Mama Shelter in Zurich?
THE MISSION?
Like Granny's dishes from our childhood, our cuisine is generous & of the best quality. In this way, you are responsible for setting up the dishes and respecting the values of Mama.
You are responsible for the quality of service, storage, and cleaning in the kitchen, as well as food storage.
You control and ensure the proper storage of supplies.
You participate in the creation of the menu in collaboration with management and the Group Executive Chef.
You recruit, lead, and develop a kitchen team of around 30 people.
You ensure the profitability of the kitchen through optimal use of goods, rigorous management, and respect of the ratios.
You respect hygiene standards and have mastered the HACCP method. You are responsible for the proper use of all equipment.

- You are organized and never let yourself be overwhelmed
- You always follow Mama’s delicious recipes to the letter: quantity, presentation, and appreciation, everything is there
- You know how to translate recipes perfectly into technical sheets; Mama lets the pros take over
- You like when there is volume, and we’re not talking about music
- You’re an excellent manager, mastering cost control, analysis of figures & optimization of productivity.
- You are an educator and love to pass on your knowledge.
- You recruit and develop talents to support the growth of the Mama Shelter group.
- A real driving force, you know how to motivate and unite the troop.
- You can handle the pressure, and we're not talking about the cooker.
- You have a good level of English, so when you’re asked, "How do you feel about the trams in Zurich?" you’ll know how to reassure the guest.
- You know how to mobilize the necessary resources at the right time (Human, Financial & Administrative) to carry out your mission.
