Assistant Director of Food

We are seeking an exceptional professional to join our team as Assistant Director of Food and Beverage at the Mandarin Oriental Palace, Luzern.
Key Responsibilities:- Supervise Food and Beverage Operations: Oversee the day-to-day operations of the F&B Department, ensuring seamless service delivery and high-quality standards.
- Assist the F&B Director: Collaborate with the Director to analyze and control key performance indicators, including guest satisfaction, merchandising, revenue, and operating costs.
- Implement Promotions and Menu Planning: Develop and execute strategic promotions, menu implementations, and wine and beverage lists in line with the annual marketing plan.
- Manage Staff and Training: Ensure effective staffing, employee orientation, job performance appraisal, coaching, and training to maintain exceptional service standards and comply with H&S regulations.
- Labour Forecasting and Reporting: Conduct accurate labour forecasting and maintain up-to-date F&B reports, ensuring timely and effective decision-making.
- Customer Service: Foster exceptional customer relationships, addressing comments, complaints, and concerns in a professional and timely manner.
Requirements:
- Hotel Luxury Experience: Proven track record in a similar role within a luxury hotel environment.
- F&B Operations Expertise: In-depth knowledge of all aspects of F&B operations, including restaurant and bar management, banqueting, in-room dining, culinary, and stewarding.
- Strategic Planning and Budgeting: Experience in developing strategic business and/or food and beverage plans, with a focus on budgeting, forecasting, and analysis.
- Leadership and Communication: Excellent leadership, communication, and interpersonal skills, with the ability to work effectively in a multi-cultural environment.
