As a Chef de Partie Sushi, you will be part of our Galley team on our Ocean vessels, supervising and managing the assigned Galley Team for all sushi and Asian food preparation in the World Café. Your expertise will ensure the smooth operation, presentation, and delivery of our culinary offerings, adhering to our quality standards and procedures.
Your responsibilities will include:
- Preparing sushi and Asian dishes to the highest standards, maintaining proper rotations of products in all chillers to minimize wastage.
- Assisting with menu planning and development, incorporating creativity and experimenting with new trends, menu ideas, and sushi recipes, ensuring compliance with weight and measurement requirements and all Public Health Policies.
- Preparing food samples, relieving cooks, and helping in various areas of the kitchen as required.
As a key member of our culinary team, you will be expected to:
- Oversee the entire Service Line at assigned sections during meals, ensuring that the food served meets our Viking STAR Service Standards.
- Prepare requisitions for daily food production, counterchecking merchandise in Galley Stores to avoid overstocking/wastage of items, and counterchecking daily deliveries from the Storeroom to ensure accuracy.

Requirements:
- A minimum of five years' sushi experience, including at least two years as a CDP Sushi or similar position, within a premium brand hospitality environment.
- Fluent in English, with excellent communication skills.
- Experience leading multi-cultural teams, flexibility, stress resistance, and a positive, service-oriented personality.
- Impeccable hygiene standards and a deep knowledge of Public Health and Sanitary Policies.
- Ability to physically handle 70+ lbs. on a daily basis and work a minimum of eleven hours a day, seven days a week.
