Role Overview:

As a Chef de Partie Sushi, you will be part of our Galley team on our Ocean vessels, supervising and managing the assigned Galley Team for all sushi and Asian food preparation in the World Café. Your primary responsibility will be to ensure the smooth operation, presentation, and delivery of sushi and Asian food, adhering to Company Procedures and STAR Service Standards.

Responsibilities:

  • Prepare and present sushi and Asian food to the highest standards, ensuring quality and presentation meet Company expectations.
  • Supervise and manage the Galley Team, providing guidance and support to ensure efficient and effective food preparation and presentation.
  • Assist with menu planning and development, including creativity and experimentation with new trends, menu ideas, and sushi recipes.
  • Prepare food samples and assist with recipe trials, tastings, and show plates as required.
  • Oversee the entire Service Line at assigned sections during meals hours, ensuring that the food served meets Viking STAR Service Standards.
  • Prepare requisitions for daily food production, countercheck merchandise in Galley Stores to avoid overstocking or wastage of items, and monitor working hours of Galley personnel assigned to the relevant section.
  • Ensure that all menus, recipes, methods, and specifications are adhered to, and spot-check the food quality of the assigned venue to ensure that all food outlets and displays meet Public Health Policies.

Requirements:

  • A minimum of five years of sushi experience, including at least two years as a CDP Sushi or similar position, within a premium brand hospitality environment.
  • Extensive European culinary training is an advantage.
  • Fluent in English, with excellent communication skills to clearly interpret and orate documents, such as menus and recipes.
  • Experience in leading multi-cultural teams, flexible, stress-resistant, committed team player, guest-focused, service-oriented, positive personality, professional appearance.
  • Impeccable hygiene standards, as well as an excellent knowledge of all Public Health and Sanitary Policies.
  • Must be at least twenty-one (21) years old, able to physically handle 70+ lbs. (31KGs) on a daily basis, and work a minimum of eleven hours a day, seven days a week.
