Executive Chef

Viking is seeking an experienced Executive Chef to join our galley team on our ocean vessels. As a key member of our culinary team, you will be responsible for ensuring the efficient operation of all food production areas.
Purpose of the Position
The Executive Chef will be responsible for analyzing food production quality and cost, managing budgets, and monitoring time management. The successful candidate will report directly to the Hotel General Manager.
Your Responsibilities
- Work within set food-cost budgets and follow portion control charts to avoid overproduction.
- Collaborate with the Inventory Manager to manage food orders, consumption, and inventory levels.
- Develop and implement strategies to upgrade food quality and presentation, including hosting Kitchen Table events and cooking demonstrations.
- Maintain communication with the Inventory Manager regarding provision-related matters, including slow-moving items, inventory, and standard products.
- Ensure the maintenance and upkeep of all galley equipment, including overseeing the annual budget and reporting any damages or malfunctions.
- Enforce compliance with menus, recipes, methods, and specifications, and conduct regular inspections to ensure quality and cleanliness standards are met.
- Lead and support a multicultural team, promoting crew satisfaction, productivity, and retention.

Your Profile
- At least two to three years of shipboard or premium hospitality experience.
- Advanced culinary skills and fluency in Japanese and English.
- Experience leading multicultural teams and strong administrative skills.
- Guest-focused, service-oriented, and positive personality.
- Ability to work a minimum of 11 hours a day, seven days a week.
