About the Role

We are seeking a highly skilled and passionate Sushi Chef to join our team at a prestigious Contemporary Asian Fusion Restaurant in St. Moritz, Switzerland. As the sole Sushi Chef, you will be responsible for preparing, presenting, and serving sushi to high standards in a fast-paced and exclusive setting.

You will be working alongside an Asian Chef in a small but dynamic kitchen, providing an exceptional dining experience for up to 50 covers. The ideal candidate must possess expertise in sushi preparation, hygiene practices, and menu development, with the ability to work independently and efficiently.

Key Responsibilities

  1. Prepare and present high-quality sushi dishes from start to finish, ensuring consistency, flavor, and presentation.

  2. Maintain mise en place and readiness during service hours, managing the flow from prep to plate with efficiency.

  3. Develop and execute sushi menus, aligning with the restaurant's contemporary Asian fusion concept.

  4. Manage all aspects of sushi preparation, including rice cooking, fish slicing, and rolling, with precision and care.

  5. Work collaboratively with the Asian Chef to ensure smooth service, sharing kitchen space and resources.

  6. Uphold high hygiene and cleanliness standards at all times, following HACCP protocols and maintaining organized workstations.

  7. Ensure all kitchen operations meet food safety standards, particularly regarding raw fish and seafood handling.

  8. Monitor and manage inventory for sushi ingredients, ensuring freshness and quality.

  9. Coordinate closely with the Asian Chef to balance workloads and optimize efficiency in a small kitchen environment.

  10. Adapt to high season demands, working long hours when necessary and maintaining a high level of performance under pressure.

  11. Engage with guests as needed, ensuring a positive dining experience and adapting dishes to meet specific customer preferences or dietary restrictions.

Requirements

  • Proven experience working independently as a sushi chef, responsible for all stages from preparation to service.

  • Exceptional skills in preparing a wide range of sushi, sashimi, and nigiri with an emphasis on creativity and presentation.

  • Ability to work quickly and efficiently while maintaining high standards in a fast-paced environment.

  • Strong focus on maintaining cleanliness and hygiene in the kitchen, following strict HACCP protocols.

  • High attention to detail in both the preparation and presentation of sushi dishes.

  • Ability to handle high-pressure situations, particularly during high season or events without days off.

  • Capable of interacting with guests when necessary, delivering personalized service.

  • Fluency in English required; knowledge of German or Italian is a plus but not mandatory.
