- DESCRIPTION DU POSTE
Sous la responsabilité de la Direction, vos missions sont les suivantes:
- Conseiller, développer et fidéliser la clientèle au travers du service quotidien et/ou l'organisation d'évènements réguliers.
- Garantir la satisfaction des clients avec bienveillance et soucis du détail.
- Cohabiter et collaborer sereinement avec le chef de cuisine.
- Atteindre des objectifs : Michelin, note G&M, et autres distinctions.
- Veiller au bon déroulement du service en participant à l'ensemble des opérations.
- Réaliser le recrutement, l'intégration et la formation des équipes, suivi des fiches ccnt et vacances
- Animer et organiser le travail de l'ensemble de l'équipe.
- Sélectionner les vins et adapter la carte en fonction de la saisonnalité
- Superviser l'élaboration et les changements du menu.
- Gérer les approvisionnements et les stocks conformément aux procédures mises en place.
- Réaliser les inventaires mensuels.
- Suivi et maîtrise des coûts et des stocks.
- Garantir la qualité de service voulu par la direction, en respectant le concept.
- Assumer une cave de plus de 1500 références.
- Perpétuer et dynamiser les ambassades Krug et Yquem.
- Instaurer une ambiance décontractée tout en respectant les procédures d’une expérience luxe.
- Travailler en équipe et faire grandir ses collaborateurs.
- Établir une relation de confiance et rigoureuse avec la direction.
- PROFIL RECHERCHE
**Vous avez une expérience confirmée en qualité d'Assistant Manager, Chef Sommelier ou Manager au sein d'un WINE BAR HAUT DE GAMME ou RESTAURANT ÉTOILÉ.**
**Vous avez des capacités managériales et un leadership reconnu, vous êtes à l'aise dans l'accompagnement et la formation des équipes. Votre sens de l'organisation et votre rigueur vous aideront à vous familiariser rapidement avec les procédures et outils du groupe.**
