Swiss Diamond Group is looking for a Director of Food and Beverage for the Ayan Zalaat Hotel and Resort in
Ulaanbaatar, Mongolia, which is due to open at the end of September 2023.
The Director of Food and Beverage, who ideally will join as soon as possible, will lead the hotel's branding process, and set the hotel up for a successful opening for its first year under Swiss Diamond Group management.
- Supervise the daytoday operation of all food and beverage outlets.
- Implement and maintain all Swiss Diamond Group service brand standards.
- Work closely with the Executive Chef and the General Manager to ensure all menus and offerings remain relevant.
- Create innovative programs and promotions to market special menus items, increase guest patronage, and boost sales.
- Work closely with the hotel's Sales & Marketing Team to promote outlets on various social communication platforms.
- Monitor the performance of the outlets through analysis of feedback and financial results and create corrective actions as needed.
- Keep a detailed log of the Outlets' daily activity.
- Assist in preparing the monthly forecast.
- Assist in preparing yearly Food and Beverage budget.
- Achieve budgeted revenues and control expenses accordingly.
- Maintain all safety standards to ensure a safe work environment for all.
- Ensure that all outlet facilities are well maintained and clean and resolve or report all deficiencies to the appropriate departments.
- Ensure preshift lineups are performed regularly for every associate in the FB Outlets.
- Perform monthly associate meetings for all outlets individually or combined and keep detailed notes.
- Perform regular oneonone meetings with all outlets associates.
- Promote teamwork and quality of execution by communication and collaboration with other relevant departments such as Sales and Marketing, Banquets, Culinary, Guest Services, Housekeeping, and Engineering among others.
- Work closely with Human Resources to identify new team members and provide appropriate training and tools.
- Perform progressive disciplinary action if/when needed.
- Actively parttake in the hotel's positive reenforcement efforts and motivate and engage all associates.
- Perform daily and weekly payroll.
- Actively parttake in purchasing efforts of daily operational items.
- Detailoriented, energetic, resourceful.
- Strong communicator with guests, associates, and the management team.
- Ability to multitask.
- Other duties assigned by the General Manager.
