Viking, a renowned cruise line, is seeking an experienced Culinary Leader to join its esteemed team. As a Chef de Cuisine, you will be responsible for overseeing the culinary operations on board one of our luxurious ships.

Job Description

Culinary Leadership Role:

  1. You will supervise and manage the Galley, ensuring the smooth operation of all events, food preparation, presentation, and delivery.
  2. As a link between the assigned Galley and the Main Galley, you will facilitate seamless communication and collaboration.
  3. Your primary objective will be to maintain the highest quality standards in food production, creating a welcoming and guest-oriented service culture that ensures exceptional guest satisfaction and repeat business.

Key Responsibilities:

  1. In conjunction with the Sous Chef, you will be fully responsible for the entire Galley of the assigned venue, encompassing food safety, creativity, cleanliness, staff management, time management, repair & maintenance, public relations, and guest interaction.
  2. You will visit the assigned Galley venue frequently during service hours, working closely with the Head Waiter, to ensure every table receives the best meal/service possible.
  3. Assist the Executive Chef in preparing requisitions for catering equipment, maintaining a productive operation.
  4. Support Section Heads in areas of responsibility, counterchecking food requisitions, making necessary adjustments, collecting and entering meal count figures into the meal count system, monitoring/control flagged and expensive item requisitions, checking meat, fish & seafood ordering & thawing procedures, touring storerooms, and conducting menu briefings.
  5. Countercheck daily deliveries from the Storeroom to ensure accuracy.
  6. Ensure adherence to menus, recipes, methods, and specifications, spot-checking all venues serving food daily to maintain quality and cleanliness standards.
  7. Familiarize yourself with the Human Resources Manual & Shipboard Training, understanding working hours policies & procedures, crew contracts, and work schedule hours/week.
  8. Lead and support a multi-cultural team, maximizing crew satisfaction, productivity, and retention.
  9. Regularly inspect mise-en-place for all areas, prepared 15 minutes prior to service.
  10. Appoint specific job responsibilities to key personnel under your direction and establish training methods.
  11. Provide competent leadership to direct reports, including performance reviews, discipline as needed, Maritime Labor Convention (MLC) compliance, onboard training, succession planning, crew communication, and recognition.
  12. Maintain impeccable grooming standards within your team, adhering to Viking's Image and Uniform Standards.
  13. E nsure company property is secured and protected during rough weather conditions to prevent unnecessary loss or damage.
  14. Become knowledgeable about itinerary-related ports of call, shore excursions, and shipboard activities like events, entertainment, and programs.
  15. Contribute positively to achieving Culinary KPI goals (quality & financial) for the Culinary Department, have full knowledge about safety & security procedures, operate in line with Public Health, Environmental, and Safety & Security Policies, participate in training concerning onboard training, safety & security, fire prevention, evacuation exercises.
  16. Demonstrate ability to take over the Executive Chef's position temporarily, assist with Cooking Demonstrations as required.

Your Profile

  1. A minimum of ten years' culinary experience, including three to four years as a Chef de Cuisine or similar position within a premium brand hospitality environment; advanced culinary skills are required.
  2. Strong Japanese Culinary knowledge is required.
  3. Fluent in Japanese and English - must have excellent Japanese and English communication skills.
  4. Must effectively handle complex situations, including managing interactions with guests.
  5. Must have experience leading multi-cultural teams; flexible, stress-resistant, committed team player.
  6. Guest-focused, service-oriented, positive personality, professional appearance, and impeccable hygiene standards are required.
  7. Team builder with effective motivational skills and coaching abilities, comprehensive knowledge of Public Health and Sanitation compliance.
  8. Must be at least twenty-one (21) years old, able to physically handle 50+ lbs. (30KGs), and work a minimum of eleven hours a day, seven days a week.
  9. Previous cruise industry experience is an advantage.

Estimated Salary: $85,000-$110,000 per year
