F&B Management
**Afin de compléter nos équipes, nous recherchons un/une**:
**F&B Director (H/F)**
- Définir les besoins du département F&B en termes de personnel conformément au budget établi
- Recruter les collaborateurs ainsi que les managers et assistants managers des différents points de vente
- Sélectionner l’équipement nécessaire au bon fonctionnement des points de vente en respectant les budgets préalablement établis et gérer les approvisionnements et les stocks de marchandise pour tout le département F&B
- Superviser les activités opérationnelles des points de ventes de restauration, à savoir la Brasserie du Royal, le Lounge Bar, le Room Service, le Sky Lounge et les Banquets
- Mettre en œuvre les directives, les politiques groupe et les procédures pour les services opérationnels supervisés
- Piloter les activités et instaurer un environnement de travail propice à la réalisation des objectifs définis tout en développant la motivation et l'adhésion des équipes en créant un bon climat de travail
- Organiser des entretiens et sélectionner, former, évaluer, encadrer et conseiller les responsables / collaborateurs du service
- Recruter et accompagner les salariés dans leur parcours professionnel
- Avec le soutien de l’Assistant F&B, organiser les plannings sur Mirus, gérer le temps de travail des équipes en optimisant les ressources au regard de l'activité des points de vente de restauration (et veiller au remplacement des absences) tout en s'assurant du strict respect de la législation en vigueur
- Former et faire monter en compétence les équipes

- Etablir une statistique de vente quotidienne
- Evaluer les évolutions des besoins des clients, adapter son département à la diversité de clientèle, aux cultures et habitudes de consommation et au paysage concurrentiel, afin de proposer les changements opérationnels et de produits / services qui s’imposent le cas échéant
- Anticiper et règler les problèmes avec les clients et mettre en place des processus proactifs visant à promouvoir la satisfaction
- Avec le Chef exécutif et le Directeur Général, contrôler l'élaboration des menus du jour, spécialités de saison, promotions diverses et changements de cartes
- Superviser et analyser le payroll pour l’ensemble des points de vente F&B en accord avec les budgets établis
- Analyser le rendement (F&B cost) de chaque service et rendre compte au Directeur Général de toute anomalie
- Mener les réunions quotidiennes du département F&B
- Veiller au respect des normes d'hygiène dans l'ensemble des points de vente de restauration et offices (normes HACCP)
- Diplômé d'une école hôtelière et au bénéfice d'une expérience similaire dans un établissement de haut standing, vous gérez quotidiennement plusieurs points de ventes en mettant un accent tout particulier sur l'accueil et la qualité du service offert aux clients
- Vous êtes particulièrement à l’aise avec les chiffres et l’analyse financière de votre département
- Vous êtes créatif et vous servez de vos expériences pour être force de proposition dans l’amélioration de votre service
- Vous êtes capable de travailler sous pression dans un environnement très dynamique. Vous gérez bien le stress tout en communiquant une énergie positive à vos équipes.
- Homme ou femme de terrain et de relations publiques, vous entretenez l’image et la bonne réputation de l’établissement moyennant une présence constante sur les différents services, activités et évènements de l’établissement.
