Responsabilités :

  • Elaborer des plats et des menus en fonction des saisons, des produits, de la clientèle, etc.
  • Créer des recettes, essayer divers produits pour renouveler la carte du restaurant, appliquer les principes diététiques pour une alimentation saine et équilibrée
  • Evaluer les quantités de marchandises à commander en fonction des recettes, des réservations et des prévisions de vente
  • Contrôler les denrées alimentaires livrées et en déterminer la qualité en fonction de critères connus (origine, méthode de culture, fraîcheur, etc.)
  • Préparer ou superviser la préparation des aliments à cuire : éplucher les légumes, les laver, couper la viande, déterminer la quantité de divers ingrédients, etc.
  • Apprêter les mets qui compensent le menu: potage, salade, viande, légumes, dessert, etc., en utilisant les appareils et ustensiles appropriés
  • Appliquer diverses méthodes de cuisson : blanchir, rissoler, pocher, étuver, braiser, gratiner, rôtir, griller, etc.
  • Garnir les plats ou les assiettes avec soin ; les passer au personnel de service

Profil :

  • Scolarité obligatoire achevée
  • Stages en cuisine déjà accomplis
  • Passion prononcée pour la cuisine
  • Très bonnes connaissances en français (à l'oral et à l'écrit)
  • Bonnes connaissances en anglais (à l'oral et à l'écrit)
  • Ouvert(e) à travailler dans un environnement international et multiculturel
  • Bonne résistance au stress
  • Flexibilité et grande motivation
