Culinary Expertise on the Venice Simplon-Orient-Express

We are seeking a highly skilled Sous Chef to join our culinary team on the iconic Venice Simplon-Orient-Express, a Belmond Train. As a member of our esteemed culinary team, you will be part of a dynamic and creative environment that brings high-end gastronomic experiences to life.

About the Role

In this exciting role, you will be responsible for preparing and cooking exquisite menus that meet the luxurious expectations of our discerning guests. You will work closely with our Head Chef to develop innovative recipes, manage kitchen workflow, and maintain the highest standards of quality and hygiene.

Key Responsibilities

  • Menu Development: Create mouth-watering menus that showcase the finest seasonal produce and artisanal ingredients.
  • Kitchen Management: Ensure seamless kitchen operations, maintaining high productivity and efficiency while upholding exceptional standards.
  • Inventory and Procurement: Effectively manage inventory, balancing quality with cost-effectiveness, to ensure the highest level of service delivery.
  • Staff Guidance and Development: Mentor and guide junior staff members, fostering teamwork and collaboration in a fast-paced kitchen environment.
  • Gastronomic Excellence: Maintain impeccable standards of food quality, presentation, and safety, consistently exceeding guest expectations.

Requirements

  • Culinary Expertise: A minimum of 5 years of experience in fine dining establishments, with overall 10 years of work experience, including exposure to high-pressure kitchen environments.
  • Strong Leadership Skills: Proven ability to lead and motivate kitchen staff, promoting high morale and teamwork.
  • Adaptability: Willingness to adapt to the dynamic and confined working conditions aboard a luxury train, handling unexpected challenges with ease.
  • Attention to Detail: A keen eye for detail in food quality, presentation, and maintaining impeccable hygiene and safety standards.
  • Cultural Fit: Commitment to creating exceptional culinary experiences that align with the prestigious reputation of the Belmond brand.
  • Languages: Fluency in English, with a basic comprehension of Italian and French.
  • Travel Requirements: Ability to travel extensively across Europe.
  • Passport Requirements: European or Swiss passport.
