About the Role

We are seeking an experienced Pastry Souschef to join our culinary team at Mandarin Oriental Savoy, Zurich. This key position plays a vital role in shaping the pastry department's strategy and contributing to the hotel's reputation for excellence in fine dining.

Responsibilities
  • Support and deputize the Executive Pastry Chef in managing the pastry department, ensuring seamless operations and upholding the highest standards of quality.
  • Develop and create innovative dessert and pastry offerings that meet the demands of discerning guests and exceed their expectations.
  • Lead, motivate, and develop a talented team of pastry professionals, fostering a culture of collaboration, creativity, and continuous improvement.
  • Monitor compliance with rigorous hygiene and safety standards, adhering to HACCP guidelines and maintaining the highest levels of food safety and quality.
  • Manage orders, storage, and the economical use of ingredients, ensuring optimal resource allocation and minimizing waste.
  • Assist in the creation of seasonal menus and special dessert offerings for events, tailoring our culinary expertise to suit diverse tastes and preferences.
Requirements
  • A degree or equivalent qualification in pastry arts, confectionery, or a related field.
  • Several years of experience in fine dining or luxury hospitality, preferably in a leadership role.
  • Creativity, passion for desserts, and attention to detail.
  • Strong leadership skills, with the ability to inspire and motivate a team.
  • Excellent organizational skills, with the capacity to work effectively under pressure.
  • A high-quality focus and knowledge of current pastry trends.
  • Familiarity with HACCP and food hygiene regulations.
  • Fluency in English; additional foreign languages are an asset.
