**Position Summary**

We at Nestlé Research & Development in Konolfingen near Bern / Switzerland develop for Nestlé worldwide new products, processes, and packaging concepts in the areas of Dairy and Nutrition.

As a **Food Safety Microbiology Intern**, you will be spearheading the effort to develop novel process technologies, and to drive Data-driven Insights, by connecting multiple sources of information, cleaning, analyzing and structuring them into business-relevant recommendations that drives future Innovation strategy. In your role, you will be leading your own project, partnering with internal technical and commercial function, and, external partners, based across the globe.

**A Day in the Life of a Food Safety Microbiology Intern**

Provide factories with a method to verify the integrity and microbial load of the packaging material incl. novel paper and fiber based materials
- Extend datasets for plastic materials on internal methodology by rinsing (i.e. recovery data, specificity and selectivity)
- Develop DoE and perform challenge tests on packaging materials with different types of microorganisms in laboratory, including a protocol for EB enumeration
- Compare recovery data on different internal and ISO methodologies for paper packaging materials to select the most appropriate on each case, and collect new data for establishment of recommendation limits/specifications

Develop the laboratory procedures and protocols necessary in process and product validation
- Define correct procedures to test and verify surrogate strain characteristics
- Investigate qualification of new surrogates for novel process technologies
- Refine validation protocols and tools
- Help establish training materials

Bacterial growth and Nitrate to Nitrite reduction in non-dairy solutions during storage
- Assess effect of non-dairy matrix on bacterial growth (TS, Aw)
- Perform challenge test on non-diary sugar-based solutions during storage
- Determine bacterial Nitrate to Nitrite reduction during storage

Inactivation of Salmonella and surrogate in high oil phase solutions
- Perform thermal inactivation study to calculate kinetics

**What will make you successful**
- Bachelor’s degree or master’s student in Food Microbiology, Food Biotechnology, Food safety or related field
- Microbiological laboratory experience acquired in corporate or academic environment
- Experience or strong interest in working with nutrition and dairy products
- Good communication skills
- Computing and IT skills in Excel
- Fluent in English, any other language is a plus
